ali's kale-blueberry salad

Eating this salad makes me feel so healthy! Also, it is colorful and pretty. P.S. - I had a hard time finding the right dressing for this salad, and tried several - I found Marie's Pomegranate Blueberry Vinaigrette dressing (in the produce section) to be perfect!

Ingredients For ali's kale-blueberry salad

  • 4 c
    fresh kale, chopped
  • 1 sm
    carrot, shredded*
  • 1 oz
    cabbage, shredded*
  • 1/4 c
    red onion, diced
  • 1/4 c
    dried cranberries
  • 1/4 c
    sunflower seeds
  • 1/4 c
    slivered or sliced almonds
  • 1/3 c
    blueberries, fresh
  • marie's pomegranate blueberry vinaigrette dressing!
  • * instead of shredded carrot/cabbage, use 1/2 cup already made broccoli slaw

How To Make ali's kale-blueberry salad

  • 1
    Rinse and drain kale, chop into small pieces, put into large salad bowl. Shred carrot and cabbage, if using (or use store-bought broccoli slaw, already shredded), add to bowl. Dice red onion, add to bowl.

    Add sunflower seeds, almonds, cranberries and blueberries. Toss to mix well.

    Add dressing and serve.
