LIME MANDARIN ORANGE SALAD W/ CANDIED ORANGE SLICE

I LOVE Congealed Salads but can't have red ones, allergic to red food dye. I really do enjoy Mandarin Oranges and the taste of lime. Great combination. This recipe I collcted from Group Recipes. Put this on a lovely dish and add some Candied Orange Slices for decoration (I posted that recipe), it's a lovely dish. I decorate with a lot of red uneatable things. For years I have been tagged the Congeal Salad Person in the family at Special Gatherings. This one is added to my list. I believe you will find it very tasty and enjoyable.

Ingredients

6 oz
package of lime jello
1 c
boiling water
8 oz
package of cream cheese, room temperature
1/2 tsp
vanilla extract
15 oz
can of mandarin orange slices, drained
8 oz
can of crushed pineapple/ drained
1 c
sprite (not diet)
1/2 c
toasted pecans pieces
8 oz
carton of cool whip/ thawed & divided

Step-By-Step

1Dissolve Lime Jello in boiling water, stir until gelatin is all disolved. SET ASIDE
2In a Med/ Large mixing bowl beat (room temperature) cream cheese w/ electric hand mixer until fluffy.
Stir in Jello mixture and beat on low until smooth.
3Gently stir in vanilla extract, oranges, pineapples, Sprite, and pecans. Chill until mixture begins to firm up...An hour or so, according to your refrigerator, check every 30 minutes.
4Fold in 3/4 cup of Cool Whip / the rest is for decoration.
Pour mixture into a 13x9x2 glass dish, chill until firm!! About 4 hours.
5Cut into squares and place a small dab of Cool Whip on each square. Gently lift out each square on to a nice, clear serving tray and randomly place candied orange slices twisted sideways between squares on outside edge of tray.
