Ingredients

1 c boiling water
1 pkg lime flavored gelatin (6 oz.)
1 can(s) crushed pineapple in juice (drain & reserve juice)
1 pkg cream cheese (8 oz.), softened
2 c heavy whipping cream
1 c chopped pecans

I recall my grandmother making a lime gelatin salad when I was a child and went searching...and oh, boy did I ever find one! Even better than my grandmothers!!

This is so rich and delicious -- I ate it for breakfast with the tiny bit of leftovers from the holiday meal!

 

Directions

In a large bowl, pour 1 cup boiling water over gelatin mix. Stir until COMPLETELY dissolved then stir in 1/2 cup reserved pineapple juice. Refrigerate until thickened but not set, about 1 hour.

Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat and cool to room temperature.

With an electric hand mixer, blend softened cream cheese into lime gelatin mixture until smooth. Stir in cooled pineapple.

In your stand mixer bowl, beat whipping cream until soft peaks form. Fold into gelatin/cream cheese/pineapple mixture, until combined. Fold in chopped pecans.

Pour mixture into Jell-O mold (5-6 cup capacity) or a pretty glass serving or trifle bowl.

Refrigerate for at least 4 hours or until set.

Close to 4 years ago, my 3 sisters & I went through all our Mom's recipe cards, notes, & books...she made a salad like this (years ago), using cottage cheese instead of cream cheese, so your grandmother & my Mom must have been in cahoots with each other...hahaha!!! We always called it the "Y'Know, The Green One"! This is a wonderful salad for Thanksgiving-Christmas Holidays, AND we like to fix it for a lot of other great family/friend gatherings throughout the other seasons...Thanks, Roz, for sharing this with everyone!

We have a similar recipe, only instead of pineapple you use canned pear sauce, and it is our favorite jello salad. I am excited to try this one now. Thanks for sharing. Roxanne

@Lisa - heavens no! Thank you for posting the pic! Now that I'm getting into my favorite recipes (outside of the Christmas cookies I just baked over the holidays and always take picture of those)...I'm going to have to remember to take pictures of the dishes I've posted recipes for! @Mary - my mom also has a lime gelatin salad recipe that calls for cottage cheese -- but I'm in love with the cream cheese/whipped cream combo! Apparently that generation/era was chock full of good ideas.

It's fun to see how our Moms & Grandmoms made such great food with what they had...so much of my Mom's was from doing up her own preserved food, dried, canned, frozen, etc...I used to can, and now it seems I have a hard time getting around to freezing, which can be so simple...however, I'm grateful for the heritage and wonderful ideas passed down from those wonderful women in our family! I, too, prefer the recipe with the cream cheese...so smooth & wonderful! Thanks again, Roz, for this fun-yum memory of a recipe!!!
