This is a egg salad makeover recipe. LOL...I was trying to come up with something to make the egg salad a little more cheerful and fun to eat. I hope this appeals to eyes as well as the stomach. It certainly was a meal that's for sure. I love all the crunch and different textures along with my creamy egg salad. I was unsuccessful in getting the picture that I really wanted, so I have to do with this one. I couldn't get the right angle no matter how many pics I took. My idea was to have the egg salad sort of shaped like a mound. I just couldn't get a photo to show that. Anyway, hope you enjoy.

Ingredients For sunny delight egg salad

  • EGG SALAD
  • 4 - 6 lg
    eggs, hard boiled
  • 1 sm
    pimentos, jar
  • 1 sm
    green onion, thinly chopped
  • 2 Tbsp
    white onion, diced
  • fresh cracked pepper
  • lettuce, chopped
  • 1/3 c
    corn kernels, frozen and steamed
  • 1 sm
    carrots, julienned or grated
  • 1/3 c
    or peas
  • 5 - 6 md
    black olives, sliced
  • SALAD DRESSING
  • 3 Tbsp
    sour cream
  • 2 Tbsp
    mayonnaise dressing
  • 2 Tbsp
    buttermilk
  • 1 tsp
    beau monde seasoning
  • 1/4 tsp
    mustard, dry
  • 1/2 tsp
    celery seed
  • fresh cracked pepper
  • dill fresh or dried

How To Make sunny delight egg salad

    Boil your eggs, peel, and then slice with an egg slicer 2 ways. Slice the egg and flip it to slice the opposite way. While you are boiling your eggs mix up your salad dressing in a bowl.

    Add your sliced eggs, pimentos, onions and mix together. Add your salad dressing to the consistency that you want. Now you are ready to assemble. Place your sliced lettuce on bottom of plate. Use a scoop to place your egg salad in the middle. Next place your shredded carrots around the base of the egg salad. Next I would take the peas and put them around the egg salad. THen the corn around the peas. Sprinkle generously your bacon bits on top of the egg salad and lightly press them in. Add your olives in the circle too and if you have it garnish with some fresh dill.
