Ingredients For spinach salad from the ss princess louise

  • one egg
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoons salt
  • dash white pepper
  • 2 tablespoons dijon mustard
  • 3 tablespoons lemon juice
  • 1 teaspoon worcestershire
  • 1 teaspoon sugar
  • 1/4 cup oil
  • SALAD:
  • two bunches spinach, small leaves preferred
  • two hard cooked eggs, finely chopped
  • six slices bacon, cooked and crumbled

    beat together egg, cheese, salt, white pepper, mustard, lemon juice, Worcestershire and sugar until well blended. Add oil and beat thoroughly. If not to be used immediately, cover dressing and refrigerate

    . Wash spinach thoroughly. Tear off stems, discard stems and drain leaves thoroughly. Then dry on paper towels. Place spinach in salad bowl. Sprinkle with egg and bacon. Add dressing, toss lightly, but thoroughly.
