I love salad. I am convinced that women crave salads and I am one of them. Sometimes instead of sitting down and having a heavy meal with the family. I like something refreshing to my palette and this hits the spot.

Ingredients

4-6 c
lettuce, wahed and torn
1 c
jicama, peeled and julienned
1/2 c
roasted pumpkin seeds (pepitas)
1/2 c
garbanzo beans (chickpeas)
1/4 c
red wine vinegar
1
shallot peeled and minced
1 tsp
dijon mustard
1 tsp
fresh thyme chopped
salt to taste
pepper to taste
pinch
sugar
1/2 c
extra virgin olive oil

Step-By-Step

1Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.

2In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard.
Whisk the olive oil into the mustard mixture.

3Pour the dressing over the salad ingredients and toss to coat.
