Harvest Spring Salad with Cranberries and Walnuts

A fresh salad with dried cranberries and walnuts. A favorite at our house.

Ingredients

4 cups fresh spring mix
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/2 cup feta cheese
DRESSING:
1/2 cup olive oil
3 t. red wine vinegar
1 t. lemon juice
2 t. sugar
1t. lemon juice
½ t. salt
1/2 t. dry mustard
1/2 t. minced shallot

Directions Step-By-Step

In large bowl, mix spring mix, walnuts, dried cranberries and feta. To make the dressing, mix all ingredients in a small bowl, stirring well with a whisk. Pour dressing over salad and toss to coat. Makes 6 to 8 servings

also another difference is the one i made had granny smith apples cut up in it. such a delicious salad, love it! thanks for sharing!

Donna, I think you can add poppy seeds to this dressing. It would be a great addition. Thanks for the tip.

i make a salad very similar to this and have lost my recipe. the only difference i see is the dressing. the recipe that i have used calls for poppy seeds. i will definetly save this, so glad that i found it!
