Ingredients

4 cups fresh spring mix
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/2 cup feta cheese
DRESSING:
1/2 cup olive oil
3 t. red wine vinegar
1 t. lemon juice
2 t. sugar
1t. lemon juice
½ t. salt
1/2 t. dry mustard
1/2 t. minced shallot

A fresh salad with dried cranberries and walnuts. A favorite at our house.

 

Directions

In large bowl, mix spring mix, walnuts, dried cranberries and feta. To make the dressing, mix all ingredients in a small bowl, stirring well with a whisk. Pour dressing over salad and toss to coat. Makes 6 to 8 servings

Lynnda, I could go for a salad like this. Yummy! I buy dried cranberries, walnuts and pecans at Costco.

Big Cedar Lodge servie a salad all most like this and I love it.The only thing their's does not have Feta,and I love feta and cranberries I have printed this off and will make it for the Ladies Lunchen at church,friday...Great Salad

It's a Costco recipe, Julia. Came from one of their cookbooks. Guess they have all the ingredients at the store.

I sure will I posted a salad with walnut's ,and cranberry some months ago,and lost it during the move to here.We have salad night once every 3rd ladies meeting ..I like pasta salad,s but love Spring Salad's.....Most of them bring pasta salad,s,but I often 'Crave Greens...Thank You again

Oh, how I wish I could eat spinach. I love it, it doesn't love me. Too much iron. I wig out when I eat it. Rats!

I love salads like this. I sub whatever nuts I have on hand, sometimes use blue cheese, fresh strawberries or blueberries, fresh pear, or a mix. I use whatever greens I have on hand. I love a mix of spinach and baby field greens (spring mix).
I love this dressing. I'll have to give it a try. I normally use 1/3 balsamic vinegar, 2/3 olive oil on these type of salads.
