Here is a quick & easy garden salad, light, and tasty as an accompaniment to any meal. The bright colors of the yellow squash and the red peppers, and red onions, becons for your taste buds. It is quite easy to make. Instead of buying 6 of the small bags of salad, why not visit one of the club stores and buy a large bag, it is usually a lot cheeper, & the salad will be great for those choosing to eat light. You can also add any of your own favorites like grape tomatoes, chopped green onions, shredded carrots, radishes, sliced mushrooms what ever you like. Be creative.

Ingredients For garden salad

  • 6 pkg
    gourmet mixed salad greens
  • 1 lg
    red onion, halved & thinly sliced
  • 2 lg
    red bell peppers,cut into thin strips
  • 4 sm
    yellow squash, thinly sliced
  • VINAIGRETTE SALAD DRESSING:
  • 1 c
    apple cider vinegar
  • 6 Tbsp
    chopped onions
  • 5 Tbsp
    sugar
  • 2 lg
    cloves garlic
  • 2 tsp
    salt
  • 2 tsp
    dry mustard
  • 1 tsp
    black pepper
  • 2 c
    vegetable oil

How To Make garden salad

    In a large bowl, toss the salad greens, sliced onions, bell pepper strips & yellow squash together, and set aside while you make the viniagrette dressing.

    VINIAGRETTE SALAD DRESSING:Add all ingredients of viniagrette to blender & process till smooth, EXCEPT THE OIL.With the blender running add oil in a slow, steady stream; process until smooth. Cover & chill until ready to serve.
