My Aunt loved this recipe on warm summer days, and said " With the already-prepared grapefruit sections, this salad can be fixed in a "snap." She passed away but her recipes keep her active in my heart.

We REALLY enjoy this combination of grapefruit, avocado and Roquefort cheese. Together they make for a really great-tasting salad. I can’t wait to have it again!

Ingredients

6 c
iceberg and romaine lettuces, torn
1 bottle
red grapefruit sections
1
avocado
1 small
sweet red onion, thinly sliced
1 1/3 c
Roquefort cheese, crumbles

FOR DRESSING:

2/3 c
vegetable oil
1/3 c
red wine vinegar
sugar, to taste
garlic powder, to taste
whisk together ingredients

Directions Step-By-Step

On 6 salad plates, arrange lettuce pieces. Top with drained grapefruit sections and avocado slices. Add a few separated rings of onion and desired amount of Roquefort crumbles. Drizzle dressing over salad and serve.
