della's prune salad

One of my husband's relatives from Chicago made this salad,it's unusual but delicious. The kids tease that Aunt Della always puts prunes in her food. She makes a prune danish that's very good and she makes a chicken dish with prunes. Maybe they're right! She DOES cook with a lot of prunes! LOL!

Ingredients For della's prune salad

  • 12 ready to eat prunes
  • 2 tablespoons orange juice
  • romaine lettuce,washed and broken into bite size pieces
  • iceberg lettuce,washed and broken into bite size pieces
  • 2 oranges
  • 1/2 c pecans,toasted and crushed
  • DRESSING:
  • 3 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • 1 tablespoon orange juice
  • 1 tablespoon honey
  • salt and peper,taste

How To Make della's prune salad

  • 1
    Place the prunes in 2 tablespoons of orange juice and simmer for 2 mins.until the prunes are slightly soft.Remove from juice and cool.Reserve juice.Remove rind and segment them and set aside.To make the dressing, mix all of the ingredients together and season with salt and black pepper. To assemble the salad, divide the lettuce leaves between 4 plates, layer the leaves with the orange segments,prunes and pecans.
