Ingredients
| 6 c | baby spinach leaves |
| 1/4 c | sliced green onions |
| 3-4 slc | bacon |
| 3 Tbsp | vinegar |
| 1 tsp | sugar |
| 1 c | chopped apple |
| 1/3 c | crumbled feta cheese |
| 1 sm | red bell pepper, chopped |

This salad has great memories for me, it is the salad I made for our first Anniversary Dinner. My husband was really taken aback at the slightly sweet and sour flavors with the crunch from the apples and the saltiness of the bacon & feta cheese. This is one of our favorite salads to have anytime no special occassion. It is BEST when you USE fresh BABY SPINACH, but I have made it using frozen chopped or leaf spinach IN A PINCH, when I did not want to run out to the store.
We both love it, but it is best when freshly made and served immediately. Try it I am sure you will like it too.

Directions
Mix spinach, green onion and chopped red bell pepper in a bowl and set aside. Cook bacon in a large skillet over medium heat until crisp.
Remove bacon & place on paper towel, but save 2 tablespoons bacon drippings in skillet. Crumble bacon; set aside. Stir vinegar and sugar into reserved drippings; heat to a boil scraping bits as you go from bottom of skillet. Add spinach mixture to skillet. Toss 1/2 to 1 minute until spinach begins to wilt. REMOVE FROM HEAT.
Add apple and feta; toss gently to mix. Transfer to a large bowl or platter and sprinkle with crumbled bacon. SERVE IMMEDIATELY.
NOTE: Best if made using Baby leaf spinach, but you can use frozen if it is completely thawed, and excess water removed before adding it to the skillet.
