A light refreshing lunch. I always start out with a guacamole salad when I go out for mexican, its my favorite. I decided to make my own semi-homemade version for a nice light lunch.

    large tomatoes
  • 2
    ripe avacados
  • 1 c
    shredded lettuce
  • 1.2 oz
    package guacamole mix
  • 1
    lime

How To Make avacado salad stuffed tomato cups

    Hollow out two tomatoes. Cut and remove pit from avacados, scoop out inside into bowl.

    Mash avacados with packet of guacamole mix, squeeze juice of half lime, mix. Best if refrigerate for 30min.

    Layer each tomato cup with shredded lettuce, s&p on lettuce then guacamole, sprinkle few chopped tomatoes. Serve with dollop of sour cream and lime wedge and cilantro. Can also add sour cream and lime on top of lettuce.
