1 pkg fresh baby spinach
1 japanese cucumber, thinly sliced
1 Tbsp fresh mint, julienned
4 c watermelon, diced
1 c fresh strawberries, sliced
1 c fresh red seedless grapes
1 c fresh green seedless grapes
1 c cherry tomatoes
1 small red onion, thinly sliced
1/4 c balsamic vinaigrette
6 oz feta cheese
1 lime, freshly squeezed
1/4 c balsamic vinegar
2 tsp dark brown sugar
1 Tbsp finely chopped garlic
1/2 tsp salt
1/2 tsp pepper
3/4 c olive oil

One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!

Personalize This


In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.
In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.

YUM!!! This is somewhat like the salad we did in school, except we had kalamata olives in it. It is such a yummy, light and refreshing salad. I will DEFINITELY be making your version when watermelons are in season again. I love using red and yellow watermelon to add more color (yellow are my absolute favorite as they are so so sweet!). WOW...just thinking about making this has my mouth watering!! Thanks much for sharing!
