WATERMELON & BABY SPINACH W/BALSAMIC VINAIGRETTE

|1||japanese cucumber, thinly sliced|
|1 Tbsp||fresh mint, julienned|
|4 c||watermelon, diced|
|1 c||fresh strawberries, sliced|
|1 c||fresh red seedless grapes|
|1 c||fresh green seedless grapes|
|1 c||cherry tomatoes|
|1 small||red onion, thinly sliced|
|1/4 c||balsamic vinaigrette|
|6 oz||feta cheese|
|1||lime, freshly squeezed|
|1/4 c||balsamic vinegar|
|2 tsp||dark brown sugar|
|1 Tbsp||finely chopped garlic|
|3/4 c||olive oil|

One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!
In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.
In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.
