strawberry, chicken & lettuce salad
This is another of my favorite salads. It has a delicious combination of flavors and textures, and is light, yet filling.

Ingredients For strawberry, chicken & lettuce salad
- FOR THE DRESSING (ENOUGH FOR 2:)

2 mdfresh strawberries, capped

1 Tbspbalsamic vinegar
-
3 Tbspsalad oil
-
2 tspmayonnaise
-
1 tspgranulated sugar
-
1 pinchsalt
- FOR EACH SALAD:

2 to 3 ctorn romaine and/or butter lettuce

1/3 cshredded/chopped cooked chicken (roasted or grilled is best)

3 to 4 lgfresh strawberries, sliced
-
1 tspsunflower kernels (shelled seeds)

1 Tbspbleu or feta cheese crumbles
How To Make strawberry, chicken & lettuce salad

1Cut 2 strawberries into pieces and place in a small bowl or cup; use a fork to mash to a pulp.

2Into a small jar, add balsamic vinegar, oil, mayonnaise, sugar, pinch of salt and mashed strawberries; screw lid onto jar; shake vigorously for several seconds; refrigerate until needed (up to 3 days.) Shake well before pouring.

3Into each salad bowl, layer lettuce, chicken and sliced strawberries.

4Sprinkle with sunflower kernels; sprinkle with cheese.

5Shake salad dressing very well; pour desired amount over salad (up to 1/2 of the dressing.)

6Serve immediately. Cover and refrigerate leftovers.
