This is another of my favorite salads. It has a delicious combination of flavors and textures, and is light, yet filling.

Ingredients For strawberry, chicken & lettuce salad

  • FOR THE DRESSING (ENOUGH FOR 2:)
  • 2 md
    fresh strawberries, capped
  • 1 Tbsp
    balsamic vinegar
  • 3 Tbsp
    salad oil
  • 2 tsp
    mayonnaise
  • 1 tsp
    granulated sugar
  • 1 pinch
    salt
  • FOR EACH SALAD:
  • 2 to 3 c
    torn romaine and/or butter lettuce
  • 1/3 c
    shredded/chopped cooked chicken (roasted or grilled is best)
  • 3 to 4 lg
    fresh strawberries, sliced
  • 1 tsp
    sunflower kernels (shelled seeds)
  • 1 Tbsp
    bleu or feta cheese crumbles

How To Make strawberry, chicken & lettuce salad

    Cut 2 strawberries into pieces and place in a small bowl or cup; use a fork to mash to a pulp.

    Into a small jar, add balsamic vinegar, oil, mayonnaise, sugar, pinch of salt and mashed strawberries; screw lid onto jar; shake vigorously for several seconds; refrigerate until needed (up to 3 days.) Shake well before pouring.

    Into each salad bowl, layer lettuce, chicken and sliced strawberries.

    Sprinkle with sunflower kernels; sprinkle with cheese.

    Shake salad dressing very well; pour desired amount over salad (up to 1/2 of the dressing.)

    Serve immediately. Cover and refrigerate leftovers.
