Ingredients For squash-pomegrante salad

  • 2 lb
    butternut squash, seeded and cubed.
  • 2 Tbsp
    olive oil
  • 8 c
    organic salad greens
  • 1/4 c
    pine nuts
  • 1/4 c
    pomegranate seeds
  • 1/4 c
    sliced red onion
  • 1/2 c
    wish bone light raspberry-walnut vinaigrette
  • 1 Tbsp
    dijon mustard

How To Make squash-pomegrante salad

    Heat oven to 400. On lg baking sheet, toss squash cubes and oil. Season w/ salt and pepper to taste. Roast 20 min, or until tender, stirring once. Let cool. transfer to lg bowl.

    Add next 4 ingredients to bowl, toss to combine.

    In another bowl, blend vinaigrette and mustard drizzle over salad.
