Sprite Lime Jello

Ingredients

LIME GELATIN
6 oz box lime jello gelatin
2 c boiling water
2 c mini-marshmallows
2 c sprite or 7-up or lemon=lime soda
20 oz can crushed pineapple ,undrained
2 large bananas, sliced
TOPPING
2 large eggs
1/2 c granulated sugar
3 Tbsp all purpose flour
1 c orange juice, fresh
8 oz tub of cool whip,thawed
1/4 c nuts, chopped- optional

This recipe from Robyn of South Dakota is very godd and I have been making it for a few years now..my family expects this at Thanksgiving, Christmas and St. Patricks Day..hope you enjoy it too!

Lime Gelatin:
Dissolve gelatin in boiling water. Add marshmallows and stir to dissolve. Add soda, slowly and the pineapple with juice and the banana slices-Pour mixture into a 9x13-inch pan. Chill until set. about 4 hours.

Topping:
In a medium saucepan, mix eggs, sugar, flour and juice. Cook until thick. Cool until cold. Fold in and blend the thawed cool whip. Spread on the set jello mixture. Sprinkle with nuts, if desired.Freeze until needed. To serve, let rest at room temperature for about 15 minutes before cutting and serving...

Thanks for the pinch Z..I love the topping on this dessert and it can be used on many others I have had it on raspberry jello in place of the lime--and I bet it will be great using raspberry or cranberry jello and using cranberry relish or whole cranberry relish in place of the pineapple or a little of each..mmmm
