I love fruit salads, which have long been popular in the south. This is one I have never had before and really wanted to try it. It was from a clipping with no company name. But, the poster of the recipe was Lorraine Black, of Iowa. This original recipe does not call for sugar. So it is fine for anyone, who would rather avoid it. But, I always liked a little sugar in the cream. You could also use artificial sweetener, stevia, or another sweetener, if you prefer.

Ingredients For red grape salad

  • 1 can
    (20 oz) pineapple tidbits
  • 2 pkg
    (3 oz each) reduced-fat cream cheese, softened
  • 2 Tbsp
    light mayonnaise
  • 3 c
    miniature marshmallows
  • 2 c
    seedless red grapes, halved
  • 1 c
    whipping cream, whipped
  • sugar or other sweetener, to taste (optional)

How To Make red grape salad

    Drain pineapple, reserving 2 Tbs. juice; set pineapple aside. In a mixing bowl, beat juice, cream cheese, mayonnaise, until fluffy. Taste mixture to see if it is sweet enough for you, if so, don't add any sugar or sweetener. If you want it sweeter, add sugar or sweetener, to taste, mixing well. Stir in pineapple, marshmallows, and grapes. Fold in whipped cream. Serve immediately, or refrigerate. Makes about 10 servings.
