Ingredients For pineapple-jicama salad

    limes, juiced
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    cilantro, finely chopped
  • 2 Tbsp
    shallot, finely chopped
  • 1 tsp
    hot sauce (such as tabasco)
  • 1 tsp
    honey
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    kosher salt
  • 1 bunch
    watercress
  • 2 c
    pineapple, cubed
  • 1 sm
    jicama, peeled and cut into matchsticks
  • 1
    jalapeno pepper, thinly sliced (remove seeds for less heat)

How To Make pineapple-jicama salad

  • 1
    Whisk together lime juice, olive oil, cilantro, shallot, hot sauce, honey, ground cumin and salt.

    Combine watercress, pineapple, jicama and jalapeno and then toss with dressing. Season to taste with salt.
