Peach Salsa Salad

We had this for dinner last night with fried catfish and potato salad. Refreshingly good!!

Ingredients

1
tomato
2
green onions
1
fresh peach or canned in own juice
1 c
cottage cheese, large curd
1 pinch
sea salt
1 dash(es)
ground pepper
1 pinch
dill weed, fresh, chopped
bunch
cilantro, fresh, chopped
dash(es)
olive oil, extra virgin
dash(es)
fresh lemon juice

Directions Step-By-Step

Chop fresh tomato, peach and 2 green onions into small pieces

Add salt, pepper, chopped dill weed and cilantro to above mixture.

Splash in a dash of lemon juice and olive oil. Mix all together and let sit for 10 minutes.

Put 1/2 cup cottage cheese into individual side dish, place half of salsa on top and serve!

Makes two servings.

Additional servings can be made adding addional ingredients. Can also be served to a group by placing cottage cheese in a serving bowl and putting salsa on top.

I also put 1 tsp of sugar in the salsa since my husband like it a bit sweeter.
