Olive and Orange Salad

An intresting and refreshing salad. The anchovies melt and no one will be able to see them - but it gives this salad its unique flavor...trust me no one will know that anchovies were used.

Ingredients

4 large
oranges
10
anchovies
1 medium
red onion chopped

pitted kalamata olives sliced
1 bunch
basil leaves torn
1/4 c
olive oil, extra virgin
salt and pepper

Step-By-Step

1Slice the skin off each orange, removing both the peel and the white skin or pith. Coarsely chop the oranges and reserve.
2Place the chopped oranges, orange juice from the oranges, anchovies, onion, olives, and basil leaves in a salad bowl. Drizzle with extra-virgin olive oil and season with salt and pepper. Toss well and serve
