Nell’’s Superb Spinach, Pear, and Dried Cherry Salad with Citrus Vinaigrette
ripe pears, peeled and sliced thinly (peeled is how my family likes it; if yours doesn’t mind, the peeling is fine)
spinach, washed and de-stemmed
dried cherries (dried cranberries are a good substitute)
pecans, roasted and chopped
freshly squeezed citrus juice (1 lemon and 1-2 oranges)
good olive oil
1 1/2 Tbsp
champagne or white wine vinegar
freshly ground black pepper
crumbled goat cheese (optional) i serve this onthe side so those who don't want the cheese don't have to eat it.
1In a small bowl, whisk together the citrus juice, olive oil, honey, vinegar, salt, and pepper. Taste dressing and correct to taste.
Pour half of dressing over pears in bottom of salad bowl. Add spinach and cherries, but DO NOT STIR until ready to serve. Refrigerate. When ready to serve, remove from refrigerator, stir thoroughly, add pecans and serve.

This sounds delicious. Do you pour half of the dressing over pears and the other half over the entire salad right before serving?
