Ingredients
| 2 | ripe pears, peeled and sliced thinly (peeled is how my family likes it; if yours doesn’t mind, the peeling is fine) |
| 1 pkg | spinach, washed and de-stemmed |
| 1/3 c | dried cherries (dried cranberries are a good substitute) |
| 1/2 c | pecans, roasted and chopped |
| 1/2 c | freshly squeezed citrus juice (1 lemon and 1-2 oranges) |
| 3/4 c | good olive oil |
| 2 tsp | dijon mustard |
| 2 tsp | local honey |
| 1 1/2 Tbsp | champagne or white wine vinegar |
| 1/2 tsp | kosher salt |
| 1/4 tsp | freshly ground black pepper |
| 4 oz | crumbled goat cheese (optional) i serve this onthe side so those who don't want the cheese don't have to eat it. |
