watermelon, seedless

cucumber halved lengthwise and thinly sliced

champagne mango peeled and cubed (2 1/2 cups)

green onions chopped
1/3 c
mint, fresh
1/3 c
pecans, in pieces, chopped
2 Tbsp
extra virgin olive oil
2 Tbsp
white balsamic vinegar
1/3 tsp
sea salt

Directions Step-By-Step

In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
