Ingredients

1 small container cottage cheese (small curd)
1 small box lime jello
1 6 - 8 oz can crushed pineapple, drained
1 small (8 oz) container whipped topping
1/2 c chopped pecans or walnuts (optional)

Jeanne's Notes:

This was something that my Mother made on holidays. It's light and refreshing and very easy. Its a recipe that has been around forever, it seems.

 

Directions

In a medium bowl, mix the cottage cheese and the lime jello (dry).

Add the drained, crushed pineapple and nuts.

Fold in the whipped topping.

Pour into your favorite serving dish and chill for at least 1 hour before serving.

Have you ever made this with cream cheese instead of cottage cheese? It's fantastic.......just add a softened cake (8 oz.) of cream cheese to the jello while it's still hot from the boiling water....mash it with a fork, to break it up. Then add the cold water and remailing ingrediants. It make's the salad even creamier. Try it, and let me know what you think!

OMG, I havn't seen this recipe in over 30 years! My Aunt use to make it every Sunday during Lent, because she always gave up sweets, but she never considered this a sweet (ha ha). It always was delish!!! Thanks for sharing and the memories..........

Cant beleive my grandmother and mother made this every thanksgiving and christmas I didnt have the recipe so thanx so much, when we were kids we thought were having dessert with our meal:) mom didnt cook much but this was one she did well

Yes, to me it is like a dessert but was always called a salad...I guess so we wouldn't feel so bad about eating it....LOL... ;)

This is a dessert that has been prepared in my family for well over 50 years, of course that was before Cool Whip which just made it so much easier to make. Every holiday my Great Granny would fix this, she also added mini marshmellows, cut it into square and put a cherry on the top of each square. I've changed it a bit and made it with all sugar or fat free items and it's still just as tasty
