My sister Joanne has been bringing this salad to every summer gathering she attends for years. It is always a big hit and has become a treasured family recipe.

Ingredients

SALAD

2 bunch
fresh spinach leaves, washed and patted dry (you can also used 1 bag fresh spinach)
1 pt
strawberries, sliced
1 can(s)
mandarin oranges, large
1
red onion, sliced

DRESSING

3/4 c
sugar
1 tsp
salt
1 tsp
dry mustard
1/3 c
red wine vinegar
1 1/2 Tbsp
red onion, minced
1 c
salad oil
1 1/2 Tbsp
poppy seeds

Directions Step-By-Step

Mix dressing ingredients (you may use a food processor or blender if you wish). Refrigerate at least 4 hours or overnight.

Assemble salad ingredients in a large bowl and toss.

Pour dressing on salad just before serving and toss again.

You can make dressing a day or two ahead. It will keep up to 2 weeks if refrigerated.
