Harvest mixed green salad w/ cranberry dressing
HARVEST MIXED GREEN SALAD W/ CRANBERRY DRESSING
|12 c||organic mixed greens, like olivias.|
|2 Tbsp||or to taste, cranberries, preferably fresh, not frozen|
|2 tsp||minced garlic from a jar|
|3 Tbsp||olive oil|
|1 Tbsp||red wine vinegar|

This can be made as a light lunch or a side salad to any meat or pork, goes especially well w/ pork loin.
Place greens in lg bowl. In small saucepan, bring some water, ( about 1/2 way full,) to a boil. Remove pan from heat, add cranberries. Let sit about 5 mins, drain.
Chop cooled cranberries. In skillet, over medium heat, saute garlic and shallot in 1 tbsp oil until soft. Add cranberries, vinegar, maple syrup, mustard and remaining oil.
Remove from heat and season w/ salt and pepper. Drizzle over greens, toss to coat. Sprinkle salad w/ pumpkin seeds.
