This sweet treat is great on a hot day when you're looking for something refreshing but not too heavy. It's so simple to make and you can doctor it up by adding different fruits to it as well.

Ingredients

2 c
cooked rice ,cooled
1/4 c
sugar
1
16 oz can whole berry cranberry sauce
1
20 oz can crushed pineapple or pineapple tidbits, drained
1
15 oz can of mandarine oranges, drained
1
container of cool whip
1 c
chopped walnuts

Directions Step-By-Step

Mix all ingredients together in a large bowl... reserving some of the mandarine oranges and chopped nuts as a garnish.

serve chilled over lettuce leaves or just spoon into dessert bowls and enjoy

*optional* can sub pecans or dry roasted cashews in place of walnuts... or can leave the nuts out entirely if you choose.

Just wondering if homemade cranberry sauce could be used. I make my own cranberry sauce and find it sweeter than canned and should I reduce the sugar

Thanks for sharing this cool and delightful cranberry recipe. I made it for Thanksgiving and my mother-in-law said she had also seen the recipe and was eager to try it! It was a nice change and addition to our feast!!

I was wondering how this holds up after mixing it together? Can it be made the night before or should it be made up a few hours prior to eating?

This tasted great, but it wasn't very popular at a potluck because of its presentation. It looks blah. I think next time I make it, I'll mix the rice, sweetener, Cool Whip, and most of the nuts, then layer the oranges, cranberries, and a few walnuts on too. Digging into it will mix the ingredients, and it might look more inviting.
