assorted salad greens, torn into bite-size pieces
can mandarin oranges, drained
cheddar or swiss cheese, cut into julienne strips
apricot or grape preserves or your favorite
1Arrange greens, oranges and cheese in a salad bowl or place on individual plates.
Heat preserves in a small saucepan over medium heat until melted. Remove from heat.
2When preserves have cooled a little, pour into a mason jar along with the oil, vinegar and onion, cover jar and shake well. Pour over salad and toss lightly. Very refreshing!
Keep any leftover dressing in refrigerator.
