Cheesy Fruit Salad

This is a favorite salad recipe of my family - very simple sometimes I use navel oranges, ham strips of chicken and pecans or candied walnuts, sesame seeds,sunflower seeds or slivered almonds too!

assorted salad greens, torn into bite-size pieces
16 oz
can mandarin oranges, drained
4 oz
cheddar or swiss cheese, cut into julienne strips
1/2 c
apricot or grape preserves or your favorite
1/2 c
olive oil
1/4 c
white vinegar
1 Tbsp
minced onion


Arrange greens, oranges and cheese in a salad bowl or place on individual plates.
Heat preserves in a small saucepan over medium heat until melted. Remove from heat.
When preserves have cooled a little, pour into a mason jar along with the oil, vinegar and onion, cover jar and shake well. Pour over salad and toss lightly. Very refreshing!
Keep any leftover dressing in refrigerator.
