Cheesy Fruit Salad

This is a favorite salad recipe of my family - very simple sometimes I use navel oranges, ham strips of chicken and pecans or candied walnuts, sesame seeds,sunflower seeds or slivered almonds too!

Ingredients

6 c
assorted salad greens, torn into bite-size pieces
16 oz
can mandarin oranges, drained
4 oz
cheddar or swiss cheese, cut into julienne strips
1/2 c
apricot or grape preserves or your favorite
1/2 c
olive oil
1/4 c
white vinegar
1 Tbsp
minced onion

Directions Step-By-Step

Arrange greens, oranges and cheese in a salad bowl or place on individual plates.

Heat preserves in a small saucepan over medium heat until melted. Remove from heat.

When preserves have cooled a little, pour into a mason jar along with the oil, vinegar and onion, cover jar and shake well. Pour over salad and toss lightly. Very refreshing!
Keep any leftover dressing in refrigerator.

Pat, I'm new to this site I hope you don't mind I've pinched a lot of your recipes. I can tell I've got lots of work ahead of me. I'm a widow and my 3 girls are grown and I usually still cook too much. Sometimes I share things with my daughters or I freeze some too. I look forward to my next shopping trip I have all these new things to try. Thank you so much for posting all these great recipes.
