A different take on Chicken Salad. The honey mustard gives it a sweet taste than just old mayo. The fruit sweetens it up just a tad & the onions & cashews gives it a nice crunch. It all equals out not too sweet but oh so yummy!

Ingredients For sweet chicken salad
- DRESSING:

1/4 choney
-
1/4 cdijon mustard
-
1/8 cwhite wine vinegar

2 tsplemon zest, grated

1 tspgarlic powder
-
1/2 tspwhite pepper
-
1 cmayonnaise
- SALAD:
-
2 lgavocado, diced
-
1/4 clime juice
-
1rotisserie chicken, deboned, any flavor, chopped into bite size pieces

1 ccantaloupe, diced
-
1 choneydew melon, diced
-
1 mdred onion, finely diced
-
1 cred seedless grapes, halved
-
1/2 ccashews, salted, coarsely chopped
How To Make sweet chicken salad

1DEBONING THE CHICKEN: Do not add the skin in with the chicken. Place in seperate bowl & give it to the dogs!

2DRESSING: In a non-metal (non-reactive) bowl, whisk together all dressng ingredients. Refrigerate 30 minutes so flavors marry together.

3SALAD: In a small bowl, place avocado & toss with lime juice; let sit 10 minutes.

4Mix together chicken, onion, melons, grapes,cashews & avocado mixture; mix to combine.

5Add dressing; cover & refrigerate for at least 1 hour or until completely chilled. (the more it sits - the better it tastes)

6Eat as is on a bed of lettuce or make a sandwich out of it by adding a piece of cheese & whatever else you may like.
