A different take on Chicken Salad. The honey mustard gives it a sweet taste than just old mayo. The fruit sweetens it up just a tad & the onions & cashews gives it a nice crunch. It all equals out not too sweet but oh so yummy!

Ingredients For sweet chicken salad

  • DRESSING:
  • 1/4 c
    honey
  • 1/4 c
    dijon mustard
  • 1/8 c
    white wine vinegar
  • 2 tsp
    lemon zest, grated
  • 1 tsp
    garlic powder
  • 1/2 tsp
    white pepper
  • 1 c
    mayonnaise
  • SALAD:
  • 2 lg
    avocado, diced
  • 1/4 c
    lime juice
  • 1
    rotisserie chicken, deboned, any flavor, chopped into bite size pieces
  • 1 c
    cantaloupe, diced
  • 1 c
    honeydew melon, diced
  • 1 md
    red onion, finely diced
  • 1 c
    red seedless grapes, halved
  • 1/2 c
    cashews, salted, coarsely chopped

How To Make sweet chicken salad

    DEBONING THE CHICKEN: Do not add the skin in with the chicken. Place in seperate bowl & give it to the dogs!

    DRESSING: In a non-metal (non-reactive) bowl, whisk together all dressng ingredients. Refrigerate 30 minutes so flavors marry together.

    SALAD: In a small bowl, place avocado & toss with lime juice; let sit 10 minutes.

    Mix together chicken, onion, melons, grapes,cashews & avocado mixture; mix to combine.
  • Very colorful!  Pleasing to the eye as well as the tastebuds!

    Add dressing; cover & refrigerate for at least 1 hour or until completely chilled. (the more it sits - the better it tastes)

    Eat as is on a bed of lettuce or make a sandwich out of it by adding a piece of cheese & whatever else you may like.
