Ingredients For waldorf chicken salad

  • 2 lg
    apples, cored and diced with peel left on
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 1 Tbsp
    honey
  • 2 stalk
    celery, chopped
  • 1/3 c
    mayonnaise
  • 1/2 c
    walnuts, chopped
  • 2
    chicken breasts, cooked, cooled, and diced
  • 2 Tbsp
    blue cheese, crumbled (optional)
  • 1/3 c
    plain yogurt

How To Make waldorf chicken salad

  • 1
    Combine yogurt and mayonnaise to make dressing. Mix diced chicken, 2 large diced apples, celery and walnuts in a large bowl. Set aside. In a smaller bowl, stir together dressing, honey, and blue cheese if desired. Pour over chicken mixture and mix well. Season with salt and pepper to taste and garnish with a pinwheel of thin apple slices.
