Ingredients

8 c
(1 bag) chopped fresh spinach
1 c
halved cherry tomatoes
1/2 c
corn (canned or frozen is ok)
1 1/2 c
chopped cooked chicken
1
large avocado, sliced
1/3 c
feta or goat cheese, crumbled
1/4 c
toasted pine nuts

DRESSING;

3 Tbsp
white wine vinegar
2 Tbsp
extra-virgin olive oil
1 Tbsp
dijon mustard
salt and freshly ground black pepper, to taste

Directions Step-By-Step

Place spinach in a large salad bowl. Add all remaining salad ingredients.

In a small bowl, whisk together the dressing ingredients. Pour over salad and toss (a little at a time...using as much dressing as you desire).

Serve and enjoy.
