Ingredients For lemony chicken salad

13.75 ozchicken broth, low salt

1/2 cparsley, chopped

1.5 cchicken breasts, cooked and cubed

pinchwhite pepper

1/2 tsptarragon, crushed

2 Tbsplemon juice

1 canpineapple, crushed with juice

1 ccold water
-
2 pkglemon gelatin
-
1/4 cred bell pepper, chopped
How To Make lemony chicken salad

1Bring chicken broth to a boil in small saucepan.

2Completely dissolve gelatin in boiling broth; add water, pineapple, lemon juice, tarragon and white pepper.

3Refrigerate until slightly thickened.

4Stir in chicken, celery and red pepper.

5Spoon into 4 individual plastic containers or serving dishes; refrigerate until firm, about 2 hours.
