Festive Chicken Salad

This recipe is light and refreshing and yet very satisfying. Any time we have refreshments at church or work, I'm asked to make it. It's a wonderful salad for holiday entertaining.

Ingredients

skinless/boneless chicken breasts
1
(6-oz.) can crushed pineapple, drained
1
red apple, diced
1-2
stalks celery, diced
1 c
pecans, chopped
1 Tbsp
grated onion
1 Tbsp
poppy seeds
mayonnaise to taste

Directions Step-By-Step

Boil chicken breasts until done and allow to cool. Shred chicken into small pieces. Mix chicken together with all other ingredients. Refrigerate overnight before serving. Serve with crackers or cocktail bread. Enjoy!
