Ingredients

1 Tbsp
oil
1/2 Tbsp
curry powder
1 tsp
tomato paste
2 tsp
lemon juice
1 c
apricots chopped
1 c
mayonnaise
2 Tbsp
heavy cream
3 c
chicken chopped
1/4 tsp
white pepper
1
bay leaf
1 c
onion

Step-By-Step

1Cook onion until tender. Mix in curry, tomatoe paste,lemon juice, and bay leaf.Stirring often for 10- 15 minuetes.Until liguid is absorbed.
2Combine onion mixture with apricots,mayonnaise and chicken in a large bowl.
3Cover and refrigerate for at least 2 hrs. Serve on salad greens or use it in sandwhiches.
