Chicken Waldorf Salad

Gloria Bernal

I threw this together one day and it's now a family favorite. On soft rich bread or croissant it makes an excellent sandwich. On these warm summer days it is an easy and elegant looking lunch or dinner served on butter lettuce leaves.
The recipe is very forgiving. Exact measurements are not necessary, I don't measure so I'm guessing at quantities. Cranberries can be substituted with raisins, berries of any kind, mandarin oranges or our favorite in summer is red seedless grapes, halved. Try it different ways, it doesn't disappoint and is so easy and refreshing with the yogurt lightening up the dressing. Omit chicken and it is a great fruit salad for vegetarians.
