This is one of my favorite chicken salads. It is versatile because you can use the BBQ styled dressing it calls for or a dressing of your choice. I sometimes like to use either Ranch or Greek Feta dressing. (This recipe came from Quick Cooking recipe books)

I am always ready to try a new salad and when BLT is in the title... well, hold me back! The BBQ sauce adds an unusual and pleasantly surprising twist that caps the salad off perfectly - ideal for a summer afternoon.


8 c
torn salad greens
large tomatoes, chopped
1 1/2 lb
chicken, cooked and cubed
bacon strips, cooked and crumbled
hard boiled eggs, sliced
BBQ Dressing
1/2 c
3-4 Tbsp
BBQ sauce, your favorite!
2 Tbsp
finely chopped onion
1 Tbsp
lemon juice
1/4 tsp

Directions Step-By-Step

In a small bowl, combine the 5 ingredients listed under BBQ Dressing, mix well. Cover and refrigerate until serving.
Place salad greens on a large platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs.
Drizzle with Dressing or serve the dressing on the side.
My I said in my above comment, I sometimes just serve it with Ranch or a Greek Feta Dressing. I like to use cherry tomatoes and just cut them in half. Use as many eggs as you like...and I also like to add cubed mozzarella cheese. You can also use cooked and cubed turkey instead of chicken!

We loved it! I served this for dinner tonight with Asiago cheese scali rolls. I halved the recipe because there was only two of us tonight, and have leftovers for lunch tomorrow. The BBQ dressing was awesome and compliments the salad beautifully. Thank you Cherie, this is a keeper!

This was as delicious as I had expected it to be! Everyone loved it, I made it with leftover grilled chicken breasts. The dressing was great too! Thanks~~ Congrats on Blue Ribbon~
