| 8 oz | apple flavored bacon |
| 1 lb | large pitted dates |
| SOUTHWESTERN BBQ CHICKEN SALAD | |
| 2 c | shredded roasted or grilled chicken breast |
| 1 c | black beans from can, drained and rinsed |
| 1/2 c | barbecue sauce, your preference |
| 1/2 c | fresh, chopped cilantro |
| 1/4 c | finely chopped green onion |
| 8 c | dark green salad greens, from a bag or torn lettuce head |
| 2 md | tomatoes, chopped |
| 1 c | frozen corn, very lightly microwaved and chilled in refrigerator |
| 1/3 c | ranch dressing |

FOR THE BACON WRAPPED PITTED DATES: Preheat oven to 350 degrees. Cut bacon slices in half. Pit dates if not already pitted. Wrap each pitted date with 1/2 slice of bacon, use tooth pick to secure. Set on baking pan with sides to catch the bacon grease.Bake for 15 - 20 minutes, or until bacon is crisp. Remove from oven and transfer to a serving platter.SOUTHWESTERN BBQ CHICKEN SALAD:
May us a rotisserie chicken purchased at the super market, just cut into small strips. Combine chicken, beans, BBQ sauce, cilantro and green onion in a medium sized bowl, toss well; set aside. In a large salad bowel, add salad greens, tomatoes and corn, toss to mix. From the 2 bowls, put salad mixture in serving bowls first then top from chicken mixture bowl. Drizzle with Ranch Dressing. Garnish each individual bowl with tortilla chips. If necessary may double or triple recipes .
