Ingredients

2 Tbsp chopped fresh parsley or 2 tsp dried
2 Tbsp red wine vinegar
2 tsp dijon mustard
1 tsp grated white horseradish
1/4 c vegetable oil, i use canola
1/2 tsp sugar
1/4 tsp salt
1/8 tsp pepper
1 1/2 lb thick sliced roast beef from the deli, cut into 1 inch strips
1 small tomato, chopped
1 shallot, thinly sliced

Cool and tasty in the hot summer time. I like this as a small sandwich.

Combine everything except beef, tomato and shallot in a large bowl.

Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat well

I like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
