Roast Beef Salad
ROAST BEEF SALAD

|2 Tbsp||chopped fresh parsley or 2 tsp dried|
|2 Tbsp||red wine vinegar|
|2 tsp||dijon mustard|
|1 tsp||grated white horseradish|
|1/4 c||vegetable oil, i use canola|
|1 1/2 lb||thick sliced roast beef from the deli, cut into 1 inch strips|
|1 small||tomato, chopped|
|1||shallot, thinly sliced|
Combine everything except beef, tomato and shallot in a large bowl.
Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat well
I like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
