Roast Beef Salad
|2 Tbsp||chopped fresh parsley or 2 tsp dried|
|2 Tbsp||red wine vinegar|
|2 tsp||dijon mustard|
|1 tsp||grated white horseradish|
|1/4 c||vegetable oil, i use canola|
|1 1/2 lb||thick sliced roast beef from the deli, cut into 1 inch strips|
|1 sm||tomato, chopped|
|1||shallot, thinly sliced|

DirectionsCombine everything except beef, tomato and shallot in a large bowl.Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat wellI like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
