This recipe has been in our family for years. My Aunt ( bless her now departed soul) at one time made part of her income by preparing and selling bags of these noodles.

Ingredients For russ's homemade egg noodles

  • 2
    eggs, beaten
  • 1/8 tsp
    baking powder (if not using all-purpose flour)
  • 1/8 tsp
    salt
  • 2 1/2 c
    flour
  • 1/2 c
    milk
  • 1 Tbsp
    butter
  • *Note: If using all-purpose flour, do not use baking powder

How To Make russ's homemade egg noodles

    In a large mixing bowl, stir together the flour and salt. Add the beaten eggs, milk, and butter. Knead the dough until smooth ( 5-6 minutes). Let dough rest in a covered bowl for 10 minutes. Sprinkle small amount of flour onto a flat surface, Roll out dough to 1/8- or 1/4-inch thickness using a floured rolling pin.Note: It may be necessary to lightly sprinkle small amount of flour onto dough surface while rolling out to keep it from sticking to rolling pin. Let air dry. With sissors, or pizza cutter, cut dough into desired lengths. Cook noodles in a large pot of lightly salted water for 20 minutes.
