Ingredients

3 Tbs. butter
2 Tbs. minced onion
1 1/2 tsp. salt
3 Tbs. flour
3 C. chicken broth
2 C. carrots, thinly sliced
1 (10-oz.) pkg. frozen broccoli, partially thawed
additional salt and pepper, to taste

Step-By-Step

1Saute butter and onion until onion is tender. Stir in salt and flour, then gradually add milk. Stir constantly and bring to boil. Add chicken broth, carrots, and broccoli. Cook slowly for 25 minutes and stir frequently. Add additional salt and pepper to taste. Serve hot.
