2 3/4 C Sifted flour
2 1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
2 Tbs Butter (or margarine) softened to room temperature
1 C Honey
1 Egg (lightly beaten)
1 1/2 tsp Finely grated orange peel
3/4 C Orange juice
3/4 C Coarsely chopped pecans, walnuts, or blanched almonds

Directions Step-By-Step

Preheat oven to 325 F. Sift flour with baking powder, soda, and salt, set aside.Blend butter with the honey until creamy; add egg and orange peel and mix well.Add sifted ingredients alternately with the orange juice, beginning and ending with the sifted ingredients.Fold in the nuts. Spoon into a greased 9x5x3 inch loaf pan and bake 1 to1 1/4 hours or until loaf pulls slightly away from the sides of the pan and is springy to the touch.Let cool upright in pan for 10 minutes, then turn out and cool on a wire rack.
