sallye's Notes:

Good information to have.

Compliments of Encyclopedia of Cooking.

Directions

1
STYLES OF CANNED TUNA:

Solid packed -- has large pieces of tuna
Chunk tuna -- has about 3 chunks with small bits to fill in
Flake tuna -- has entirely small bits or fragments
2
TYPES OF TUNA:

Light meat tuna - from the yellowfin, skipjack or small bluefine tuna
White meat tuna - from the albacore tuna.
3
WHICH TO USE:

Use the light meat in mayonnaise=dressed salads, casseroles or any other dish where appearnce is not important

The more expensive white tuna is more attractively suited for antipasto platters and vinaigrette salads where appearance is important
4
NUTRITION:

Tuna packed in water has about half the calories of tuna packed in oil

But even packed in oil, tuna has only 200 to 300 calories per 3-1/2 ounces.

I know what you mean, Kathy. I just stumbled across this information while I was looking for another recipe and thought it was good to know. Will I remember all of it? Probably not, but now I at least know not to albacore tuna just to make tuna salad. Allright! saving money!
