Ingredients

4
duck breasts, boned

RELISH

2 c
chopped raspberries (also can use frozen)
3/4 c
sweet onion, chopped
4 Tbsp
raspberry vinegar
2 Tbsp
lemon juice
1 Tbsp
fresh sage or 1/2 tsp. dried sage
1/2 Tbsp
crushed red pepper flakes
3 Tbsp
creme de cassis

MARINADE

1/4 c
olive oil
1/2 tsp
salt
1 clove
garlic, minced
1 tsp
chopped fresh or dried sage

Step-By-Step

1In a glass bowl combine all ingredients for the relish.
2Separate bowl mix all ingredients for the marinade, add 1/3 cup relish mixture to the marinade.
3Marinade the duck breasts for 2 - 4 hours, and turning.
4Grill duck breasts skin side down over a hot heat 5 - 7 minutes. Duck should be served med-rare.
