Everyone LOVES Turkey pie, even more than the tukey dinner it follows.

Ingredients

FOR THE FILLING

3 c
leftover turkey, cut up
3 c
leftover cooked vegetables, peas, carrots, creamed onions, mushrooms, ect
1/2 can(s)
cranberry sauce, jellied or whole berry
1 c
leftover turkey gravy
2 to 3 c
leftover turkey stuffing or dressing

FOR THE TOPPING

6 c
leftover mashed potatoes, cold

egg yolks
1/4 c
melted butter, cooled
1/4 c
all purpose flour
1/4 c
grated parmesan cheese
1/8 tsp
black pepper
1/8 tsp
salt

prepared pie shell
leftover gravy

Directions Step-By-Step

preheat oven to 375

For the filling:
Mix all ingredients in large bowl, set aside.

For the topping:
Mix the potatoes and eggs first, then the rest of the ingredients, set aside.

Lay your prepared pie shell in a deep dish pie dish. I use the roll out kind, because the ones that come in a tin are not deep enough.

form your edging the way you like.

pour filling into shell, pressing down to fill holes.

spread topping over filling, pressing down to seal all holes.

Bake for about an hour, hour and 15 minutes, or until topping is golden brown. Remove from oven and set on counter for 10 minutes before serving.

serve with gravy, if desired.
