I threw this together one morning after Thanksgiving and the discovery was so simple and so delicious that we've made it a comfort-food staple for the winter months.

Blue Ribbon Recipe

This is a great way to reinvent boring turkey leftovers. Making a hash from leftover mashed potatoes and turkey is genius. Cooking down the onions really has a punch of flavor. I love the crunch on the outside of the hash. Serving a fried egg on top sends this over the top. A great breakfast, but it's hearty enough for dinner too.

Heat up a large skillet on medium-high heat. Add some olive oil to the pan (enough the lightly coat the bottom). Toss in some chopped onion. Enough for the amount of turkey and potatoes you plan to use.

Once the onions are tender, add the turkey and stir it around.
  • 4
Throw in some mashed potatoes until you think it's enough.
  • 5
Cover the pan with a lid or some foil and leave it alone for 5 minutes.
