Ingredients For turkey enchiladas

3 cturkey, cooked and shredded

1/2 cwater

1/2 tsporegano

1 tspsalt

2 cchopped onion

2 Tbspolive oil

1minced garlic clove

2 cangreen chiles
- SAUCE INGREDIENTS

1/3 ccorn oil

12corn tortillas
-
1 tspsalt
-
2 cshredded cheddar cheese

2 csour cream

1 1/2 lbstewed tomatoes
How To Make turkey enchiladas

1Combine turkey with sour cream, cheese and 1 teaspoon salt.

2Heat 1/3 cup oil and dip tortillas in until soft and drain.

3Stuff with turkey mix and roll.

4Arrange side-by-side with seam side down in shallow pan.

5Turkey Sauce: Rinse seeds from chiles and chop.

6Saute with garlic in oil.

7Add stewed tomatoes, onions, 1 teaspoon salt, oregano and water.

8Simmer uncovered until thick, about 1/2 hour.

9Pour chili sauce over enchiladas and bake at 350 degrees 20-30 minutes.

10Let set 5-10 minutes before serving.
