Super Turkey Enchiladas

My family loves these. I often times will make a large batch and then freeze them individually for a quick lunch.

Ingredients

1 1/2 c
cooked turkey, shredded (or chicken)
1 1/2 c
cheddar cheese, shredded
1/2 c
onion, chopped
1 10-3/4 oz
cream of mushroom soup
1 10-3/4 oz
tomato soup
1 10-oz can(s)
enchilada sauce
12
corn tortillas (or flour)

Step-By-Step

1Combine turkey, onion and 1/2 cup cheese and set aside.
2Combine soups and sauce.
3Dip tortillas in hot oil a few seconds on each side to soften. (I used the microwave to heat them up).
4Top each with a heaping tablespoon turkey mixture, roll up and place seam side down in 13x9 inch baking dish.
5Pour sauce over and top with 1 cup cheese.
6Bake 350ºF for 1/2 hour.
7Leftovers can be refrigerated and reheated.
