I love using ground turkey instead of ground beef, but I hate how dry turkey burgers are unless they are "beefed" up. This recipe has evolved in my attempts to make turkey burgers juicy and delicious!

Ingredients

1/2 c
chopped onion
2 clove
garlic chopped
1/4 c
green pepper diced
2 Tbsp
tomato paste
1/2 c
whole kernel corn (frozen)
1/2 c
canned black beans, drained & rinsed
2 Tbsp
olive oil
1 lb
ground turkey
1 c
corn tortilla chips, crushed
1 tsp
ground cumin
1/2 tsp
cayenne pepper
1
egg
1 tsp
salt
sliced tomato & avocado
4
kaiser rolls

CHIPOTLE MAYO

1/4 c
canned chipotles in adobo sauce, chopped
1 c
mayonaise

Directions Step-By-Step

1
Combine the chipotles and mayo in a small bowl. Cover and refrigerate until ready to assemble burgers.
2
In a saute pan heat oil, then add onions, garlic, and green pepper. Cook until vegetables are tender, 3 to 5 minutes. Add the tomato paste and stir until well blended. Remove pan from heat and add the corn and black beans. Stir carefully
3
In a large mixing bowl, combine the turkey, corn chips, and spices. Add the corn and black bean mixture and egg. Mix well.
4
Shape mixture into 4 burgers. Grill over medium high heat until cooked through (about 10-15 minutes). Assemble burgers placing one on each roll with the tomato and avocado slices and chipotle mayo.
