What shall I make with leftover smoked turkey? I think I'll make a Salad Sandwich. This is what I came up with. Yeah, it was pretty freakin' good! I hope you enjoy it. Cooking with Passion, sw :)

Ingredients

1 lb
smoked turkey breast, cooked & cubed
1/4 c
pomegranate infused cranberries-reconstituted in warm water & drained
2 oz
pistachio nuts, chopped
1 small
red onion, chopped
1/2 stalk
celery, chopped
3/4 c
mayonnaise-more if needed
1 pkg
dry ranch mix
2 tsp
black pepper, course ground
4-6
onion rolls
1-2 oz
arugula

Directions Step-By-Step

in a large mixing bowl, combine ingredeints 1-8. mix well. chill for at 30 minutes. build your sandwich-bottom of bun, arugula, turkey salad and top of bun. Enjoy!
