Island Turkey Strips

This is a simple and delicious recipe from 1/2 hour meals. It is a combination of tropical flavors. This is a great way to transport to the islands~without leaving home!

Ingredients

2 lb
turkey or chicken breast (cut into thin strips)
14 oz
can of coconut milk
1 Tbsp
dark brown sugar,packed
2 Tbsp
honey
1 large
lemon~juice from
2 Tbsp
balsamic vinegar
1 Tbsp
orange marmalade
1/2 c
cilantro, chopped
1 medium
vine ripe tomato, chopped
1 tsp
cumin
1 Tbsp
curry
1/2 tsp
black pepper

Step-By-Step

1Combine all ingredients in zip lock bag , except the turkey breast strips.
Place turkey strips in the plastic zip-lock bag and marinade for 1 hour or you can do it over night in refrigerator.
2In a large skillet place 3 Tablespoons of olive oil and heat. Let turkey strips drip off excess marinade and place in heated skillet. Do not place too many in pan at once.
3Let turkey strips become golden on one side and turn to the other side to finish cooking; about 3-4 minutes on each side depending on the thickness of the meat strips. Enjoy!! A family pleaser.
