I love making chili in the summer when everything is fresh. I then freeze it in smaller mason jars and thaw out in the fall and winter for those cold days.

Ingredients For comfort crock pot chili

  • 1 lb
    lean ground meat or turkey
  • 1/2
    white onion diced
  • 1/2
    yellow bell pepper diced
  • 1 can
    med olives (i cut mine in half to adjust) drained
  • 1 can
    light red kidney beans drained
  • 1 can
    small tomatoe paste
  • 1 can
    diced tomatoes lightly drained
  • olive oil, extra virgin for sauteing
  • pepper
  • salt
  • minced garlic
  • chili pepper
  • crushed red peppers
  • brown sugar

How To Make comfort crock pot chili

  • 1
    heat oil in pan and add garlic, salt, pepper, crushed red peppers let simmer for a few mins

    then add diced onions and diced yellow bell peppers saute till soft and crisp. Then add olives to lightly heat up and season

    put all ingredients into crock pot listed in fist two directions. Add diced tomatoes and beans set on Low

    in same pan add meat season with crushed red peppers, chili pepper, pepper season to brown and drain.

    add to crock pot, along with tomato paste and brown sugar. Stir well, cover and let sit 5-7hrs or till ready. Stir, add water to thin and seasons to taste
